Colbalt wax coated Vintage Cavern Aged Cheddar. A rich distinctive cheese with a full and deep umami flavour, definite nutty notes and a fruity tang to finish. There is an intensely creamy and smooth mouthfeel with an occasional bite from crystals that form within the cheese. The cheese has a pale creamy appearance and savoury aroma with slight earthy notes.
