PDO (Protected Designation of Origin) Mould Rinded West Country Farmhouse
Cheddar Cheese made from a dedicated Farm Assured (Red Tractor) milk supply
taken from local farms and pasteurised to legal limits. Starter culture & rennet
(suitable for a vegetarian diet, benzoate free) are added. The curd is cut, stacked
and turned by hand before salt is added prior to packing into moulds.
Traditional cheeses are wrapped in pork larded cotton cloth, bagged during
maturation (target 9 months) prior to being transferred to underground caves
(for up to 3 months). Cheese is supplied to customers based on flavour profile
mature through to vintage. The manufacturing process follows Good
Manufacturing Practice supported by a comprehensive HACCP system. Conforms
to the legal standard for Cheddar and West Country Farmhouse Cheddar.
