How To Fry Prawn Crackers
Fill a medium size saucepan with oil to a depth of 3cm and heat until very hot (200°C)
Test the temperature with one prawn cracker, it should puff up instantly. Remove from the oil.
Fry a few at a time, remove as soon as they are puffed up and drain well on kitchen paper.
Alternatively use a deep fat fryer.
Serve immediately or, if required, the cooked crackers will keep in an airtight container for a
few days
